Not long after opening Aimsir, husband and wife team Jordan Bailey and Majken Bech-Bailey, achieved two Michelin stars and needless to say, the popularity of Aimsir, soared. However, Covid hit and the lockdowns began. Like a lot of restaurants, Aimsir did the ‘dining at home’ thing until restrictions started to ease. Once restaurants re-opened, Aimsir released a three month block of available tables (which sold out in about 20 minutes) and we were fortunate enough to get a table (thanks sis). The restaurant is located in Co. Kildare at the Cliff at Lyons hotel. Bookings are sold in the form of an ‘overnight experience’ which includes B&B at the hotel and dinner at Aimsir.
