Who does not like a Christmas market? In the past, we visited Christmas markets, in the likes of say, Vienna, or Budapest, however, the German markets are considered to be some of the best. This trip was booked way back in the summer which seemed strange at the time, however, we managed to get a good price on a ‘fancy’ hotel, hence the early booking, so, as always, you can check out the festive details right here.

A weekend in Amsterdam
It was a bit of a last minute decision, but we decided a short break was needed just for kicks and we decided on the Dutch capital, Amsterdam. I have been before but this is a first for C and she is really looking forward to it. We booked a nice hotel bang in the centre of the city which is always handy. A little East Cork road trip 2022
With the summer ending, we decided to hit the road for a short trip to East Cork and stay at one of our favourite spots, Ballymaloe house. While there, we also spent a night in the small fishing village of Ballycotton and checked out a little known place called Cush. You can check it all out here.
Taking it easy at fancy Adare Manor
This was a return trip to Adare Manor, we had last visited just a few months before COVID arrived so for this little spiel, I’ll incorporate some elements of that previous visit and this more recent one, you can check it all out here.
Green Day – in London
Over two and a half years ago, we booked tickets to see Green Day in concert, but due to that COVID thing it was rescheduled, cancelled, rescheduled again and finally now we get to see them in concert. I’m sure it’ll be a slightly different gig than the one we just came from in Edinburgh. You can read all about London right here.
The Eagles – in Edinburgh
One of my favourite bands – The Eagles, were due to play in Dublin but due to other circumstances we could not go. However, after a little investigation, we discovered they were playing in Edinburgh and we thought – what a great excuse to go back to Edinburgh and while there, catch the show. Naples, The Amalfi Coast and Capri
This trip has us checking out some of the highlights of this part of Italy which draws visitors in their millions year after year so it was high time we checked it out. Actually the island of Capri has been on C’s bucket list for as long as I can remember so let’s see if it lives up to the hype. Things slowly getting back to some sort of normality…….hopefully!
Things are looking good. It’s been over two years now since the first wave of lockdowns and restrictions kicked into place and as of right now, normality seems to be returning. As things were looking good, we booked a night in a place we have been a few times before, the Cliffhouse in Waterford. However, for this review, we are going to focus on our meal in it’s Michelin star restaurant and you can read all about it here, however, if you would like a more in-depth view of the Cliffhouse, check out a previous visit by jumping in here. Further adventures are looking more and more likely as we seem to be leaving Covid behind us, so here’s hoping.
Hello 2022
Like 2020 and 2021, we had lots of travel plans, but here we are, at the start of a new year, with the two year anniversary of the first lockdown less than three months away. We had plans for travel over the Christmas (2021) but with the restrictions changing on a daily basis, different restrictions for one country over another, testing and what not, we took the tough but sensible decision to cancel our trip. We did, however, manage two more getaways before the end of 2021. We were back in Dublin to check out a new restaurant venture by top chef Mickael Viljanen and you can read all about it here. And finally, after almost 19 months, we took a flight for a trip to fantastic Modena and you can read all about that here.
As for travel plans and jaunts for 2022, well we have plenty of plans in place, but, for now, we just have to wait and see, so here’s hoping we finally turn that corner – and not turn back!
Michelin star dining in Aimsir
Not long after opening Aimsir, husband and wife team Jordan Bailey and Majken Bech-Bailey, achieved two Michelin stars and needless to say, the popularity of Aimsir, soared. However, Covid hit and the lockdowns began. Like a lot of restaurants, Aimsir did the ‘dining at home’ thing until restrictions started to ease. Once restaurants re-opened, Aimsir released a three month block of available tables (which sold out in about 20 minutes) and we were fortunate enough to get a table (thanks sis). The restaurant is located in Co. Kildare at the Cliff at Lyons hotel. Bookings are sold in the form of an ‘overnight experience’ which includes B&B at the hotel and dinner at Aimsir.
